No caso da chef Roberta Sudbrack, um dos nomes mais respeitados da gastronomia brasileira, tudo come\u00e7ou com um cachorro-quente.<\/div>\n<div class=\"elementToProof\">Foi empurrando a carro\u00e7a da av\u00f3 Iracema pelas ruas de Bras\u00edlia que ela aprendeu o valor do of\u00edcio. A av\u00f3 preparava os molhos, os acompanhamentos e a salsicha; ela vendia. Ali, ainda jovem, descobriu que comida \u00e9 mais que receita: \u00e9 afeto, \u00e9 sustento, \u00e9 caminho.<\/div>\n<div><\/div>\n<div class=\"elementToProof\">Anos depois, essa mem\u00f3ria retorna ao prato. E, para marcar o Dia do Cachorro-Quente, celebrado nesta ter\u00e7a-feira, 9 de setembro, Sudbrack resgata suas origens no Ocre, seu \u00fanico restaurante fora do Rio de Janeiro, instalado no Wood Hotel, em Gramado. No bar de charcutaria da casa, o lanche ganha duas vers\u00f5es, com destaque para o <b>Wood <\/b><\/div>\n<div class=\"elementToProof\">Dog\u00a0\u2013 cria\u00e7\u00e3o autoral do cl\u00e1ssico que a acompanha desde a inf\u00e2ncia.<\/div>\n<div class=\"elementToProof\">Nada aqui \u00e9 casual. O p\u00e3o brioche \u00e9 feito por ela mesma, a salsicha \u00e9 do tipo Frankfurt, o queijo raclette vem derretido na hora, a salada coleslaw traz frescor e a mostarda forte fecha o conjunto com vigor. Ao lado, as batatas fritas, que a chef n\u00e3o hesita em classificar como \u201cas melhores do nosso mundo\u201d. O combo custa R$ 69 e, como toda boa comida, entrega mais do que sabor: conta uma hist\u00f3ria.<\/div>\n<div><\/div>\n<div class=\"elementToProof\">J\u00e1 o <b>Perro Quente<\/b>\u00a0(R$ 69) mistura sotaques: p\u00e3o brioche, lingui\u00e7a chistorra na brasa, tzatziki e tomatinhos marinados, tamb\u00e9m acompanhado das famosas fritas da casa. No Ocre, Sudbrack n\u00e3o apenas cozinha; ela revisita cap\u00edtulos da pr\u00f3pria vida. Entre lembran\u00e7as da carro\u00e7a da av\u00f3 e o refinamento da cozinha contempor\u00e2nea, o cachorro-quente que um dia foi sustento de menina volta agora em vers\u00e3o celebrada.
