A cerim\u00f4nia do Guia MICHELIN Rio de Janeiro &amp; S\u00e3o Paulo 2026 acontecer\u00e1 no ic\u00f4nico Belmond Copacabana Palace, em parceria com a prefeitura da cidade Rio de Janeiro, e ter\u00e1 como inspira\u00e7\u00e3o a exuber\u00e2ncia verde das montanhas cariocas, a for\u00e7a da Mata Atl\u00e2ntica como paisagem cultural viva e o Jardim Bot\u00e2nico, que simboliza a integra\u00e7\u00e3o entre a cidade e o verde.<\/p>\n<p>O card\u00e1pio da noite ir\u00e1 celebrar a regionalidade brasileira com o uso de ingredientes fornecidos por pequenos produtores, que fazem parte do Programa Chefs de Origem do Sebrae, e de pescados nacionais da Frescatto, de todas as regi\u00f5es da costa brasileira. Tudo harmonizando com Chandon Excellence Brut Safra 2021, produzido em Garibaldi, regi\u00e3o sul do Brasil.<\/p>\n<p>O menu leva uma assinatura dupla do chef Nello Cassese, detentor de uma estrela Michelin, \u00e0 frente do Ristorante Hotel Cipriani, e o chef Wellington Barcellos, chef de banquetes do hotel, e foi desenhado especialmente para a ocasi\u00e3o. A proposta gastron\u00f4mica reflete a identidade e a hist\u00f3ria do Rio de Janeiro que j\u00e1 foi Capital do Imp\u00e9rio e da Rep\u00fablica Brasileira e que agrega em sua gastronomia influ\u00eancia dos povos origin\u00e1rios e da culin\u00e1ria Africana, Portuguesa, Espanhola e Francesa, com uma diversidade gastron\u00f4mica que passeia do botequim a alta gastronomia.<\/p>\n<p>&#8220;Rio e S\u00e3o Paulo s\u00e3o cidades que abrigam pessoas de todo o Brasil. Por isso, no menu que elaborei, quis mostrar itens tradicionais de toda a gastronomia brasileira e ainda apresentar novidades. \u00c9 uma aventura!&#8221;, conta o chef Nello Cassese.<\/p>\n<p>Pensado para surpreender convidados e homenagear a excel\u00eancia culin\u00e1ria, o menu percorre diferentes texturas, aromas e produtos emblem\u00e1ticos, traduzindo em cada etapa o compromisso do Guia MICHELIN com a autenticidade, a qualidade e o respeito \u00e0 origem dos ingredientes. Tudo isso presentes nos\u00a0<em>snacks<\/em>\u00a0como as tarteletes de queijo de cabra e legumes, os croquetes de polvo, os canap\u00e9s de atum, palmito e caju e de carne de porco, mandioca e rapadura. Al\u00e9m disso, os sal\u00f5es do tradicional hotel v\u00e3o abrigar o aut\u00eantico churrasco de curraleiro p\u00e9-duro, t\u00edpico do nordeste brasileiro. O clima da cidade anfitri\u00e3 estar\u00e1 presente nos gar\u00e7ons servindo mate gelado, sandu\u00edche natural e espetinho de camar\u00e3o. Uma baiana montar\u00e1 seu tabuleiro com cocadas, acaraj\u00e9s e bai\u00e3o de dois. As sobremesas, criadas e elaboradas pela chef de confeitaria Diana Moreira, s\u00e3o um passeio delicioso pela do\u00e7aria brasileira: mini \u00e9clair Romeu e Julieta, mousse de chocolate 100% com biscuit de cacau, mini pa\u00e7oca, curau, minibolo de cenoura com chocolate, mousse de caipirinha, mini beijinho, mini tarteletes de cupua\u00e7u com chocolate ao leite, sorvete de cumaru e uma surpresa divertida que \u00e9 cara do Rio, o p\u00e3o na chapa com caf\u00e9 com leite \u00e0 moda do Copacabana Palace.<\/p>\n<p>A ambienta\u00e7\u00e3o da cerim\u00f4nia equilibrar\u00e1 a eleg\u00e2ncia atemporal da hotelaria cl\u00e1ssica com a energia vibrante da Mata Atl\u00e2ntica, em harmonia com o azul do mar que emoldura o cen\u00e1rio carioca.
